薯餅加蛋早餐杯杯 | Hash Brown & Egg Breakfast Cups



用馬鈴薯餅加上蛋和其他健康食材做成的早餐杯杯,營養又好吃!
美好的星期日早上就以這份早餐開始吧!

材料 (2 份)
  • 馬鈴薯 – 2、3 顆小的,或 1 顆大的
  • 起司絲 – 1/4 杯
  • 黑胡椒
  • 橄欖油 – 1 大匙
  • 蛋 – 2 顆
  • 你想搭配的食材 (酪梨、番茄、培根等等)

特殊器材
  • 一個杯子蛋糕烤盤

步驟
  1. 預熱烤箱至 400°F (200°C)。
  2. 馬鈴薯去皮後刨絲,放入冷水裡泡 1 分鐘,讓澱粉釋出。
  3. 把水倒掉,重複一次步驟 2。
  4. 把水倒掉,並用廚房紙巾把馬鈴薯絲的水分吸乾。
  5. 將馬鈴薯絲、起司絲、鹽、黑胡椒、橄欖油混合均勻。
  6. 把混和物放入烤盤的杯子裡鋪好,弄成杯狀。每個杯子要有容納一顆生蛋的空間。
  7. 送入烤箱烤 20 分鐘。
  8. 取出烤盤,在每個馬鈴薯杯杯裡打一顆生蛋,再放上一點起司絲和黑胡椒等調味料。
  9. 烤箱設成 375°F (190°C),再烤 7-10 分鐘,或烤到蛋白變熟但蛋黃還有點生。
  10. 取出烤盤,把馬鈴薯杯杯拿出來,放上想搭配的食材就完成啦!

Ingredients (for 2 cups)
  • Potatoes – 2 to 3 small ones or 1 large one
  • Shredded cheese – 1/4 cup
  • Salt
  • Ground black pepper
  • Olive oil – 1 tbsp
  • Egg – 2
  • Toppings of your choice (avocados, tomatoes, bacon, etc.)

Special Tools
  • A muffin pan

Directions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and shred the potatoes, and put them into cold water for 5 minutes to remove some of the starch.
  3. Drain the water, and repeat step 2.
  4. Drain the water and dry the shredded potatoes with a kitchen towel.
  5. Mix the shredded potatoes with shredded cheese, salt, black pepper and olive oil.
  6. Put the mixture into the cups of the muffin pan.
    Make them cup-shaped. There has to be enough room for an egg in each cup.
  7. Bake for 20 minutes.
  8. Take the pan out and fill each cup with an egg. Add some shredded cheese and seasoning on it.
  9. Set the oven to 375°F (190°C) and bake for another 7-10 minutes, or until the eggs are over-medium.
  10. Remove the pan from the oven, take the breakfast cups out, and add the toppings. Enjoy!
