- 起司絲 – 1/4 杯
- 鹽
- 黑胡椒
- 橄欖油 – 1 大匙
- 蛋 – 2 顆
- 你想搭配的食材 (酪梨、番茄、培根等等)

Ingredients (for 2 cups)
- Potatoes – 2 to 3 small ones or 1 large one
- Shredded cheese – 1/4 cup
- Salt
- Ground black pepper
- Olive oil – 1 tbsp
- Egg – 2
- Toppings of your choice (avocados, tomatoes, bacon, etc.)

- A muffin pan
Directions
- Preheat the oven to 400°F (200°C).
- Peel and shred the potatoes, and put them into cold water for 5 minutes to remove some of the starch.
- Drain the water, and repeat step 2.
- Drain the water and dry the shredded potatoes with a kitchen towel.
- Mix the shredded potatoes with shredded cheese, salt, black pepper and olive oil.
- Put the mixture into the cups of the muffin pan.
Make them cup-shaped. There has to be enough room for an egg in each cup. - Bake for 20 minutes.
- Take the pan out and fill each cup with an egg. Add some shredded cheese and seasoning on it.
- Set the oven to 375°F (190°C) and bake for another 7-10 minutes, or until the eggs are over-medium.
- Remove the pan from the oven, take the breakfast cups out, and add the toppings. Enjoy!
